On a weekend that – between illness and the weather – was pretty much a washout, I thought it might be nice to reflect on some of the good bits.
At least the weekend started on a high. My version of a mojito was to bash some sugar, lime and mint leaves then add ice (crushed preferably), white rum and soda water to taste. There is absolutely no point in me being more technical than that. I am not a mixologist and these were far from the best mojitos, but they done the trick and definitely raised a smile.
My circuit training session is different every week. This week I not only flipped a tractor tyre, I lifted and carried it. Why? Well…because the instructor told me to. Daft, but I was quite proud.
Courtesy of my brother-in-law’s fresh rosemary infused bread delivery, my low carb weekend didn’t quite go to plan. It quickly changed to “an amazingly delicious bread-fest” weekend instead. First topped with avocado, poached egg, cayenne pepper and crispy bacon, and then in – what I very technically call – tomato smoosh bread. Thinly slice the great bread and lightly toast. Drizzle with extra virgin olive oil and rub with a clove of garlic. Then “smoosh” beautifully ripe on-the-vine tomatoes into it. No knives allowed for the smooshing. Yum.
Purchased from Steve the Fish Man, I simply dusted the fillets with seasoned flour, pan fried in butter and served with a wedge of lemon. To accompany it, I had my first attempt at braised fennel and little gem lettuce. I’ve not cooked any of these things before, but enjoyed them all. Winner.
Obviously I am hating my little man being poorly, but I have to admit that I am quietly relieved that it is now and not next weekend, as we are off to Ireland to see my sister. The chance to see him playing with his cousins has been sunshine on a grey horizon and will be just the tonic after being stuck indoors these few days. In the meantime there is always Playdoh.
