Do you hate breakfast? Or more to the point, get really bored with breakfast? Of course weekend breakfasts when we have a bit more time and can indulge in preparing fresh pancakes or scrambled eggs, are great. But on the average week day, I don’t know about you but I am bored of breakfast! I’m also trying to reduce the amount of bread and refined sugar I eat, which is hard when you are on the go. So I sought a solution. And these breakfast muffins are what I came up with.
